Expensive and limited
I’m really not sure who this is for other than a weird way to market a product for everyone who doesn’t know enough to know better. It’s not keto and it’s not flour - It is basically cassava, almond, and coconut, so it’s more of a plant meal. There are better gluten free options out there (by this company!) an it has limited applications since it doesn’t work up like a regular flour would in texture or react the way it would need to with yeast; you need a LOT of leavening agent to make anything rise, and it’s expensive. At Almost $14 a pound it would cost a fortune to make muffins or bread or cakes on a regular basis. Even then all of the individual ingredients are available at a lower price per pound (by the same company!). The only one I could see using this is that die hard paleo person we all know who is hardcore but doesn’t really understand nutrition, they just know if it wasn’t for cave folk it isn’t for them and have ZERO flexibility on it (we all know at least one).

Tastes good!
I love cooking and baking. I tried the King Arthur Flour Paleo Baking Flour 1lb and I was satisfied with the result. My Cake was fluffy and tasted good. Easy to mix and made with high quality ingredients.

pricey
I was excited for this since I like to bake and was hoping to be able to easily convert some of my recipes. I figured I would try the bread recipe on back to understand it a bit better with something tested. It was okay - quite dense and had a weird, almost plastic aftertaste. If you want to try it for yourself, I would be interested to see if you added a touch of sugar to help the yeast actually activate. Also instant yeast would benefit from being activated with some warm water (not hot) before adding to the mix. However it also used up all but 40g of the flour so it was a $20 loaf of okay-bread. Not worth it for me. I like the use someone else had - for drudging deep fried items, that would maybe be worth the ease!

Great Gluten free flour
I really enjoyed using this flour as a 1-1 replacement for all purpose flour. Baked goods come out nice and I like that this mix uses lower glycemic flours and more nutritious ingredients then normal gluten free mixes.

PALEO BAKING FLOUR
Paleo Baking Flour is the BEST grain-free flour i've used. Cassava flour adds viscosity which lets eggs and leaveners do their job in keeping baked goods light. Coconut flour helps thicken batters and doughs with more fiber and moisture. Bakes similar to Regular grain flour!
